Fresh courgette flowers12

Cold sparkling water180 ml

Sunflower oil500 ml

Gently clean the courgette flowers, removing the pistil and any tough parts.

In a bowl, whisk together the plain flour, cold sparkling water, egg, and salt until you get a smooth batter (do not overmix, a few lumps are fine).

Heat the sunflower oil in a deep pan.

Dip each courgette flower into the batter, then fry in small batches in the hot oil until golden and crispy, about 2-3 minutes per side.

Drain the flowers on kitchen paper and sprinkle with a little extra salt.

Serve immediately, hot and crispy.
