Instructions

In a large bowl, combine the minced pork, smoked paprika, sweet paprika, dried oregano, ground cumin, garlic powder, chilli flakes, salt, black pepper, and red wine vinegar.

Mix all the ingredients well until you get a homogeneous mixture.

Knead the mixture with your hands for a few minutes to evenly distribute the spices.

Cover the bowl and let it rest in the fridge for at least 2 hours to allow the meat to absorb the flavours.

Shape the mixture into small cylinders.

Heat a non-stick frying pan over high heat and cook the chorizo cylinders until golden and crispy on all sides.

Serve the chorizo hot with rustic bread and a squeeze of lemon.
