Put 3 tablespoons of chilli powder into a small bowl.
Add 1 tablespoon of ground cumin.
Stir in 1 teaspoon of garlic powder and 1 teaspoon of onion powder.
Add 1 teaspoon of smoked paprika, half a teaspoon of dried oregano, half a teaspoon of cayenne pepper, 1 teaspoon of salt and half a teaspoon of black pepper.
Mix thoroughly until the spices are evenly coloured and the texture is uniform.
Transfer the spice mix to an airtight container and store in a cool, dark cupboard for up to three months.
