Combine 3 tablespoons chilli powder, 1 tablespoon ground cumin, 1 tablespoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried oregano, ½ teaspoon salt, ¼ teaspoon black pepper and ¼ teaspoon cayenne pepper (optional) in a small bowl.
Stir well until the mixture is evenly blended and the colour is consistent.
Transfer to an airtight container and store in a cool, dark place for up to six months.
