In a small bowl, add the chilli powder, ground cumin, smoked paprika (or ordinary paprika if you prefer), garlic powder, onion powder, dried oregano, salt, ground black pepper and cayenne pepper (optional).
Whisk until the mixture is smooth and the colour is uniform.
Transfer the seasoning blend to a small airtight jar and store it in a cool, dark place; it will keep for up to six months.
To season chicken: after cooking and draining about 450g of minced or shredded chicken, stir in 2 tablespoons of the seasoning along with 60ml of water or chicken stock. Simmer for a few minutes, stirring occasionally, until the liquid is absorbed and the chicken is evenly coated.
