Combine the sea salt, freshly ground black pepper, garlic powder, onion powder, smoked paprika, dried thyme, dried oregano and cayenne pepper (if using) in a small bowl or jar.
Whisk until evenly blended, or seal the jar and shake until there are no lumps.
Store the seasoning in an airtight container in a cool, dark place for up to 6 months.
When you're ready to use the seasoning, rub 1–2 tablespoons (15–30ml) over a whole chicken or sprinkle about 1 teaspoon (5ml) per 450g of chicken pieces.
Leave the seasoned chicken to rest at room temperature for 15 minutes, or refrigerate for up to 2 hours before cooking.
