If the chicken is still warm, allow it to cool slightly, then shred or roughly chop into bite-sized pieces.
Finely chop the celery, red onion and red pepper.
Roughly chop the fresh coriander.
In a medium bowl, combine the chicken, celery, onion, pepper and coriander.
Stir in the mayonnaise and juice of half a lime. Taste, then add the remaining lime juice if you like.
Season with salt and freshly ground black pepper, then stir again.
Cover and chill in the fridge for at least 30 minutes to let the flavours meld.
Serve in sandwiches, in lettuce cups or with crackers or tortilla chips.
