Instructions

Char the aubergines and red bell peppers over the stove.

Peel the skins off the charred vegetables and chop them finely.

Chop the onion and tomato and add them in.

Crush the garlic cloves and add to the mixture.

Add olive oil, lemon juice, and salt, then mix all ingredients well.

Transfer to a serving plate and serve with crusty bread if desired.
