Yellow onions600 g
Extra virgin olive oil2 tbsp
Unsalted butter1 tbsp
Brown sugar1 tbsp
Salt1 tsp
Balsamic vinegar2 tbsp

Peel and thinly slice the onions.

Heat the extra virgin olive oil and unsalted butter in a large pan over medium-low heat.

Add the sliced onions and salt. Cook slowly, stirring occasionally, for about 30 minutes until the onions become soft and golden.

When the onions are well softened, add the brown sugar and continue cooking for another 10 minutes, stirring often.

Pour in the balsamic vinegar, mix well and let cook for another 2-3 minutes until the liquid reduces.

Serve the caramelised onions warm or at room temperature, perfect on bruschetta, burgers, or with cheese.
