Slice the calamari into rings.

Place the calamari in a bowl, add milk, baking soda, salt, and black pepper.

Mix well and marinate for at least 30 minutes.

Remove the marinated calamari from the liquid and drain excess moisture.

Coat each calamari ring in flour.

Heat sunflower oil in a deep pan.

Fry the floured calamari until golden brown.

Place the fried calamari on paper towels to drain excess oil.

Serve hot, accompanied by lemon wedges.
