Instructions

Place beef bones, onion, carrots, celery, garlic, bay leaves, apple cider vinegar, black peppercorns, and water into a large stockpot.

Bring the mixture to a boil over high heat.

Reduce the heat to low and let it simmer gently, uncovered, for about 12 hours. Skim off any foam or impurities that rise to the surface.

After simmering, strain the broth through a fine mesh sieve to remove solids.

Let the broth cool, then store in the refrigerator or freezer for later use.
