Preheat the oven to 150°C (130°C fan, gas mark 2). Line a baking tray with baking parchment or brush lightly with vegetable oil.
Arrange the boudin sausages on the tray, leaving space between each for the heat to circulate.
Bake for 20–25 minutes, turning them halfway through so they brown on both sides. They’re cooked when they reach an internal temperature of at least 71°C (160°F).
Remove from the oven and leave to rest for 1–2 minutes.
Serve the boudin sausages hot with water biscuits and a dash of your favourite hot sauce. You can also serve them with mixed salad leaves (optional).
