Soak the wooden skewers in water for about 30 minutes to prevent them from burning during cooking.

Cut the lamb shoulder into small cubes.

Thread the lamb cubes onto the skewers.

Brush the meat with extra virgin olive oil.

Sprinkle with coarse salt, freshly ground black pepper, and some chopped fresh rosemary.

Grill the arrosticini on a hot grill for about 6-8 minutes, turning them often to ensure even cooking and a slight crust.

Serve the arrosticini hot, just removed from the grill.
